MINIMUM QUALIFICATIONS:
The following are required and must be verifiable:
- Registered Dietitian or Registered Dietitian eligible with successful credentialing within one year of employment.
- Successful completion of the employment screening process to include, but not limited to, drug test and national background investigation.
PREFERRED QUALIFICATIONS:
Preference will be given to those candidates with the following qualifications and must be verifiable:
- Employment experience in a commercial kitchen.
- Dietary experience in a long-term care facility.
- Experience in menu development for geriatric populations.
- Above-average computer skills and knowledge of Microsoft Office Suite.
- Experience developing policies and procedures.
- Experience providing in-service instruction.
- Experience with Quality Assurance / Quality Validation protocol.
- Knowledge of regulatory guidelines related to food service in nursing homes.
- Experience with the regulatory survey process (e.g. AHCA survey of a skilled nursing facility).
POSITION DESCRIPTION:
The incumbent will work under the supervision of the Nutrition Program Manager and will coordinate with the Food Service Directors to plan and direct the facility food service and staff to ensure sanitary, safe, nutritious and cost-effective meals and snacks for residents. They will oversee all phases of food purchasing, storage, preparation, production control; merchandising, service, and inventory control to provide optimum nutrition, minimize cost and ensure compliance with all Federal and State regulatory agencies.
Position requires overnight travel to assigned FDVA facilities.
Operational Duties:
- Develop standard menus (to include seasonal changes) for all State Veterans’ Homes and coordinate as needed with the Homes to personalize the menus as needed for the needs of their specific population.
- Coordinate with Homes to streamline the purchasing of foods and supplies to maximize our buying power (e.g. seasonal foods, volume discounts, specials).
- Responsible for developing and implementing standards and procedures for dietary services.
- Conduct independent quarterly facility visits to assigned State Veterans’ Homes.
- Provide onsite evaluations and audits of dietary services and develop/implement training as needed.
- Present routine ongoing in-service instruction to maintain/improve dietary practices.
- Provide coverage for the Homes Dietary Management staff as needed.
Team Functions:
- Active participant on the Quality Validation Survey team.
- Confer and Coordinate with the Regional Clinical team as needed in planning positive resident outcomes.
- Perform other related duties as required.
