Ideal candidates will bring a wealth of experience in managing multi-outlet staffing, preferably within a hotel/resort environment, and have union experience.
Essential Duties and Responsibilities include the following. Other duties may be assigned.
- Inspire Excellence: Drive performance to ensure adherence to all service standards, sanitation standards, and productivity standards, ensuring exceptional guest satisfaction.
- Financial Stewardship: Track and forecast all outlet revenues and expenses, ensuring company goals are met on a monthly and yearly basis.
- Resource Management: Maintain inventories of related restaurant/bar equipment and products.
- Policy Development: Develop and implement policies and procedures, ensuring consistent application.
- Team Development: Lead the hiring, coaching/counseling, mentoring, training, and professional development of restaurant/bar management and employees.
- Project Management: Organize multiple projects, manage and prioritize tasks, and meet deadlines.
- Team Spirit: Exhibit a positive and involved team attitude, promoting positive relations through open communication, trust, and mutual respect.
- Communication and Problem-Solving: Strong communication, organization, problem-solving, and follow-up skills.
- Quality Assurance: Ensure the quality levels of restaurant/bar products, standards in production, services, facilities, and guest satisfaction.
- Procurement Oversight: Implement and monitor ordering and receiving programs to ensure proper quantity and prices on all restaurant purchases.
- Event Planning: Plan and organize special events within the restaurant/bar.
- Safety and Compliance: Execute and promote the Accident Prevention Program to minimize liabilities and related expenses.
- Marketing Collaboration: Work closely with the marketing team and vendors to develop and implement promotional strategies to drive revenue.
- Guest Relations: Actively engage with guests to ensure their satisfaction and to gather valuable feedback.
- Technology Utilization: Implement and manage restaurant technology systems, including POS systems, reservation systems, and inventory management software.
- Versatility: Perform any other job-related duties as assigned.
- Union Experience: Experience with managing in a union environment is highly preferred (NYC/market preferred).
Training and Development: Ensure all training and development programs are conducted as necessary and all areas are compliant with local, state, and federal laws as well as Sonesta requirements.
Strategy and Planning:
- Comprehensive Management: Manage all aspects of the food and beverage service department.
- Inventory Control: Direct and complete scheduled inventories.
- Staffing Efficiency: Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. Adjust schedules throughout the week to meet business demands.
- Event Coordination: Coordinate details of upcoming functions with the Catering & Conventions Services managers.
Financial Management:
Payroll Oversight: Drive payroll accuracy in the department ensuring meal breaks are taken and time cards are accurate.
Budget Management: Manage the operating budget and achieve all revenue and expense targets.
Strategic Participation: Actively participate and advise in the food and beverage budget and forecasting processes.
Managing Your Team:
- Daily Briefings: Conduct pre-shift meetings with staff and review all information pertinent to the day’s business.
- Performance Evaluations: Assist in annual performance evaluations of team members.
- Fairness and Equity: Ensure employees are treated fairly and equitably.
- Coaching and Development: Coach team by providing specific feedback to improve knowledge, skills, and performance.
- Collaboration: Establish and maintain open, collaborative relationships with direct reports and the entire Food & Beverage team, ensuring direct reports do the same for their teams.
Qualifications
To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. - Experience: Minimum 5 to 7 years’ experience as a restaurant/bar manager/director.
- Multi-Outlet Management: Experience managing multiple outlets.
- Operational Knowledge: Strong knowledge of front and back of house operations including food, beverages, staff supervision, inventory, and food safety.
- Financial Acumen: Strong understanding of cost and labor systems that lead to restaurant profitability.
- Leadership Skills: Strong communication and leadership skills.
- Budget and Forecasting: Comfort working with budgets, payroll, revenue, and forecasting.
- Education: Associate or bachelor’s degree in business management or hospitality management is highly preferred.
- Union Experience: Preferred.

Pay Range
Salary range: 80k - 85k; Base pay offered may vary depending on various factors including but not limited to job related knowledge, skills, and job specific/overall experience.
