The iconic Hotel del Coronado is looking for an Executive Chef to lead its talented culinary team! Join one of the last surviving wooden Victorian beach resorts in the world after a $400M renovation and expansion.
Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has 900 rooms (to include cottages and villas), over 250,000 square feet of banquet space, and 10 food and beverage outlets including 4 restaurants, 2 bars, a food truck, a marketplace, an ice cream shop, and in-room dining.
Responsibilities:
- Direct and oversee all culinary operations, including production of all hotel meals, food quality and presentation, compliance with safety and sanitation standards, team member productivity, cost controls, and overall profitability.
- Create and implement new menus and individual menu items based on current food trends and regional tastes in partnership with the Director of Food and Beverage.
- Interact with guests and clients to monitor satisfaction trends, evaluate issues, and make improvements accordingly.
- Ensure compliance with federal, state, local, and company health, safety, sanitation, and alcohol awareness standards.
- Perform general management duties including systems management, budget and forecasting, report generation, department management, and meeting participation.
- Monitor and develop team member performance, including providing supervision, professional development, scheduling, counseling, and evaluations.
- Recruit, interview, and train team members.
The salary range for this role is between $180,000 to $200,000 depending on experience.
